No bake cheesecake with blueberries
A substrate made of biscuits and cheese cream rarely can resist. Cheesecake that does not have to be baked with the addition of summer fruit like blueberries makes this dessert perfect for all your summer gatherings.
INGREDIENTS FOR ABOUT 10 LARGER GLASSES
- 100 g biscuits
- 1.5 tbsp sugar
- 70 g butter
- 500 g cottage cheese
- juice 1 lemon
- 2 vanilla sugars
- 4 tablespoons powdered sugar
- 150 g blueberries
- 200 ml sweet cream for whipped cream
- fresh fruit
- If desired, fresh mint leaves
PREPARING
- Weigh in and prepare all the ingredients. Arrange the glasses on a tray that fits in the fridge.
- If you don't want to bake, you don't have to, if you like the smell of baked biscuits and butter, and make that part of the Cheesecake a little crunchier then turn the oven on to 180C and leave to warm. Place the oily paper on a large oven pan and set aside until the biscuits are cooked.
- You'll grind the biscuits the easiest by putting them in a large meat bag and chop them with a roller, simply by normally rolling over the bag. Mix the minced biscuits in a special bowl with 1.5 tablespoons of sugar and butter, make the right hand and place on the pan you have prepared. Put the biscuits in the oven for about 10 minutes, until a little tender. If you will not bake them, set them aside and proceed with the preparation.
- While the biscuits are baked, you prepare the cheese cream by mixing the fresh cream cheese, juice 1 lemon, 2 vanilla sugar and 4 tablespoons of powdered sugar. Wash the blueberries and chop in the blender.
- Add the shredded blueberries to the cheese cream and mix everything together once more. You can place the finished cream in the cups using a spoon or using a decorating bag.
- The biscuits are already baked, you can start filling them with glasses. When you're done with the biscuits, put the cheese cream on them.
- For the end, mix the sweet whipped cream, and place it over the cheese cream in a thin layer.
NOTE
- Cheesecake can be further garnished with fresh fruit and leaves of fresh mint.
- This Cheesecake doesn't require long cooling. If you want you can eat it immediately or leave it for 1-2 hours in the fridge.
